Oats Upma

Oats Upma

Ingredients

1 cup Quaker Oats
1 onion, finely chopped
2 tbsp peas
4-5 green chillies ,finely chopped
2 dried red chillies
1/2 tsp minced ginger
1 tsp mustard seeds
a pinch of hing (Asafoetida)
2 cups water
6-7 curry leaves
salt to taste
4 tsp ghee or Oil

Method

Roast the oats in a pan without oil for about 3 minutes and keep it aside.
Heat some oil( or ghee) in the pan and add mustard seeds, green chillies, chopped onion and saute till the onion is tender.
Then add  minced ginger, curry leaves, asafoetida,salt and peas.
Add water and allow it to boil for some time and then add the roasted oats.
Keep stirring till all the water is absorbed and oats are thoroughly cooked and serve hot !!

Corn Toast

Ingredients

6 – Bread
2 cups corn steamed/boiled till done
2-3 onions, chopped finely
1 green chilli chopped finely
1 tablespoon butter
1 tablespoon all purpose flour (Maida)
1 to 1 1/4 cup milk
Pepper powder – as per taste
Oregano – as per taste
1/2 teaspoon red chilli flakes
Salt to taste
4- 6 tablespoons grated cheese
Oil as required.

Method

White sauce
Heat butter in a pan, when it melts add all purpose flour(Maida) and fry it. It should not turn brown.
Remove from the fire and add half cup milk and stir nicely not to form lumps. Add all the milk and cook in the fire till the sauce is thick.

Add salt, pepper powder and oregano to sauce.

Corn Masala
Combine oil and onion in a microwave safe dish and cook in medium high for 2 minutes.
Add Red chili flakes and salt and cook in medium high for 2 minutes.
Add the corn and cook in low for 3 to 4 minutes.

Toast
Place the bread in a plate and spread the corn masala on that and spread white sauce over that.
Sprinkle cheese over that, cook in Grill mode for 2 minutes or until the cheese melts.
