Spaghetti with Pesto Sauce

Spaghetti with Pesto Sauce

Ingredients :

1 pound spaghetti
2 cups fresh basil leaves
1/2 cup pine nuts
2-3 garlic cloves
1/3 cup olive oil
3 tbsp Parmesan cheese
Salt to taste

Method :

Toast the pine nuts in a small pan over medium heat, stir frequently until golden.
Boil some water, add salt and cook the spaghetti according to the package directions.
Grind pine nuts, cheese, garlic cloves and 1/2 tsp salt in a food processor or blender.
Add basil leaves to processor. While processor is running, pour olive oil into mixture in a thin stream. The pesto is ready.
Place a pan on medium heat, add drained spaghetti and pesto sauce. Add some of the pasta cooking water, if needed.
Stir the pesto into the pasta and mix thoroughly. Spaghetti with Pesto is ready to serve.

Penne Arrabiata

Penne Arrabiata

Ingredients :

250 grams Penne
2 medium onions , finely chopped
3 medium tomatoes
6-7 garlic cloves, chopped
2 tsp red chiliĀ  flakes
1 tsp red chili powder
1/2 cup tomato puree
2-3 chopped green chilies (optional)
1 tsp oregano
Fresh parsley
2 tbsp olive oil
Parmesan cheese, freshly grated
Salt to taste

Method :

Boil penne in plenty of water with salt and a teaspoon of oil till al dante which means till just cooked.
Drain and set aside to cool. Blanch tomatoes, peel and roughly chop.
Heat oil in a pan. Add garlic and saute for half a minute.
Add red chili flakes and continue to saute. Add onions, green chillies and saute till onions turns soft and translucent.
Add chopped tomatoes and mix. Add tomato puree, red chili powder and mix. Add salt, oregano and mix well.
Cook for 2 to 3 minutes till the mixture gets a sauce consistency. Add little water, if the sauce is too thick.
Add the pasta to the sauce and mix in well.
Serve hot garnished with parsley and grated parmesan.
